Thanks to its unique “NO-STRESS” system is able to assure the maximum scaling accuracy in all the sizes without any dough mistreating. The weight selection is done by an handwheel and the values are shown on an index. The sucked dough quantity is adjustable through a motorized system equipped with display. The possibility to change quickly, through the simple shift of a selector, from n.1 to n.2 ways, makes this machine one of the most versatile dividers in the market. The conveyor belt consists of two parts with possibility to adjust the speed of second one in order to space out the pieces and make easier the coupling with others machines like rounders etc. Flour sifter placed before the falling of pieces on the conveyor belt in order to avoid dough sticking on the belt. The machine stops automatically in cleaning position that allows the easy extraction of : pressing piston, knife and weighing pistons. The cleaning operation must be done at the end of every working day.

Ultimate divider for "Ciabatta" able to cut with high precision and without any mistreatment all the dough types from medium and hard dough up to the very soft dough like "Ciabatta dough" having a water content up to 80% ( 8lt of water per 10 kg. of flour). Thanks to special motion of knifes and n.5 laminating cylinders, divides and calibrates the dough with high precision without mistreating. A revolutionary system allows to change from n.1 to n.2 ways simply moving two handles. The possibility to adjust: the number of rows, the laminating thickness, the cut length and the speed allows to the machine to satisfy all customer’s requirements.

The ultimate volumetric dividing machine designed to scale soft and medium dough both of wheat flour and mixed wheat/rye. The revolutionary dividing system doesn’t require cleaning as, at the end of production cycle, it remains no dough residual into dividing drum. A simple dividing system delicately divides dough without mistreating or compressing it and enables high precision in loaf weighing. Dough weights are continuous selected by means of a useful handwheel and values are shown on a special display. Output can be continually controlled and adjusted from 900 min. to 2700 pcs/hr max., which places such dividing machine among the most efficient ones. |High precision multi-purpose divider|
Suitable for both hard dough having a Water/flour ratio of 48% (*) and very soft and sticky dough, like Ciabatta, having a water/flour ratio up to 80% (*). Suitable for both 100% white-flour dough and 100% rye flour dough. Dough resting in yeasting basins (*) for two hours and even longer are gently cut by this machinery. A lubricated star cutter placed under the hopper cuts the dough into pieces and send them to the lamination system. Then a group of beating rollers adjustable for thickness and stroke frequency performs the lamination thus producing a continuous dough foil gently processed in the same way as only master bakers with their rolling-pin can do. The two-rows dividing function shows the dough foil cut into two by a lubricated disk and spaced by two conveyors. A flou sifter provides a flour layer thus avoiding the dough from sticking to the conveyor. Then another sifter sprinkles flour on the dough to keep it from sticking to the guillotine. The dough foil goes over the Weighing conveyors – to be weighed with gram accuracy – which give instruction to the guillotine to cut the desired weight. To improve weighing accuracy the weight is checked once more before the cut dough leaves the weighing conveyors. Weight dynamic check with feedback on the next dough piece provides a high weighing accuracy. Beating roller lamination and guillotine cutting ensure extremely gentle dough processing always resulting in a Light and well-alveolated bread texture as if it were worked by hand-operated tools. Thanks to high quality performances and successful outcomes Gravi-Flux is a real No-Stress divider. Gravi-Flux can be combined with other No-Stress rounding and moulding machines to create Gravi-Line, a compact multi product line. It also produces loaves with no need of intermediate proofers.
